Vegan Asian Avocado Dressing and Salad

This is seriously amazing stuff. I came up with the recipe because I thought that avocado would be nice on a salad, and then I just tweaked and experimented until I got a recipe I liked.

Okay so it looks a bit gross and maybe like a hot mess, but trust me.. it’s YUMMY.

THE ASIAN AVOCADO DRESSING

Serving Size: One (FB-sized) or meant for 2 Normal People

  • 1 avocado (not overripe where it’s brown inside, slightly firm is better than rotten)
  • 2 small cloves of raw garlic (you can omit this if you don’t like raw garlic or spiciness)
  • 2 tablespoons of sesame oil (really gives a nice mellow flavour)
  • 1 1/2 tablespoon of miso paste (done to taste, but I found it’s enough)

Mix it all together. I used an immersion blender and didn’t bother chopping the garlic.

It becomes super thick like a paste.

THE SALAD

  • Sliced small tomatoes (they have more flavour) marinated with a toss of diced rosemary
  • Lettuce (I like Boston lettuce, green leaf or red leaf.. any kind of soft lettuce)
  • Very thinly shaved onions
  • ….anything else you want to toss in

Now all you have to do is spoon the dressing on and massage it in.

Cover every lettuce leaf if you can with the dressing; then dig in until the whole bowl is gone.

My mom had a bite of it and said: WOW! Tastes so hearty. Like eating meat…. without meat.
